Job Description:
Planning Activities – 15%
- Takes all steps to maximise profitability and to ensure that the F&B profit budget is achieved
- Conducts profit driven F&B audits and field visits
- Monitoring and analysis of the labour cost at hotel level, according to business levels / activity / season
- Review food and beverage advertising and promotional material for internal and external use
- Helps to establish the food and beverage department operation in new hotels.
- Evaluates new F&B trends and competitors products offering, and updates the offering accordingly. Collects, analyses and follows up on departmental marketing plans within the region
- Proactive planning of new opening pipeline to provide to the hotel team concept clarity and initial pre opening set up .
Organising Activities – 20%
- To instil brand awareness and compliance based on Hilton Brand Service Standards.
- Ensures the highest standards of quality in all aspects of the hotels’ F&B operations, guaranteeing that brand values and standards are never compromised.
- Reviews food and beverage forecasts and budgets as well as food and beverage pricing.
- Actively follows up on SALT & QA reports, underlying the shortcomings for the hotels – activates the action plans
- Be fully familiar with and to ensure adhesion to all Financial tools – F&B Budgets, F&B Beat, Dashboard, Menu Engineering, P&L Statements, Follow up on results of Operational Excellence
- Follow up on results of Operational Excellence
Directing Activities – 30%
- Active support to F&B teams in pre and post opening for new hotels
- Responsible for hands on implementation of all F&B concepts and standards in EMEA
- Monitors standard compliance and progress and compiles reports for EMEA F&B Team
- Supports key projects through data analysis, consultation of key operational issues within hotels and build financial models to assist decision-making
- Reviews food and beverage collaterals and promotional material for internal and external use.
- Reviews menus and drink lists including, menu engineering, merchandising, menu item selection, writing style, cover and arrangements.
- Co-ordinates special events, festivals and joint promotions, as part of the area marketing plan
- Review compliance of all F&B programs
- Review compliance of all F&B related procurement programs
- Actively follows up on QA and mystery shopper reports, underline shortcomings for the hotels – follow-up on improvement action plans
- Implements new F&B concepts and works closely with Hilton Restaurant group and F&B Development
- Conducts F&B Deep Dives and field visits, covering F&B revenue, CMPOR, GTMS, F&B SALT and any other key metrics.
- Ensures that OeX (Operational Excellence) is embedded into the hotels and tools and best practices fully used in hotels.
Staffing Activities – 20%
- Identifies and develops talent within F& B teams and develops strategy to attract new talent
- To maintain contact with GM’s, HM’s, DO’s, Ops Executive Chefs, F&B Managers in the area and ensure a smooth succession plan
- Reinforces area learning and development F&B programmes to ensure well-trained employees
- Interacts closely with the regional teams, regional purchasing, establishing local/regional priorities
- Conducts monthly Conference calls, Webinars with FBMs and Chefs
- Holds periodic professional Workshops with regional FBM and Chef populations
- Reinforce personal development programme within hotels to provide well-trained employees and co-ordinate cross exposure training when required.
- Provide input to F&B succession plan and recommend candidates for promotion and transfers.
- Form s a Champion structure as per Hilton s F&B outline and works to achieve great trend setting product and concept delivery
- Fully involved with the hiring of Food and Beverage Managers and Chefs. Oversees the hiring process of F&B Department heads
- Ensures inclusion into Area HR and L&D programmes
Controlling Activities – 15%
- Coordinates pre-opening support for all new hotels with over 40 Hotels under development in his area ..
- Ensures that costs are controlled and in line with business levels
- Supports Regional teams with key initiatives through training, presentations and hotel operational and financial audits.
- Performs other tasks or projects as assigned by EMEA F&B Team relating to Egypt s , KSA and Nord Africa s needs
- Collects, analyses and follows up on departmental marketing plans within the region.
- Researches and compiles F&B best practices
- Takes responsibility for the CAPEX project list with the regional specialists and Hotel team
ORGANIZATIONAL RELATIONSHIPS
- Position directly reporting to this position – VP Operations Egypt and North Africa
- Acts as a resource to all GMs/Hotel F&B teams

Job Requirements:
Education:
- University degree or Associates Diploma in Hospitality Management or equivalent
Relevant Experience:
- Operational experience in hotels/restaurants with experience in the same or similar position (e.g. Director F&B, Director of Operations)
Technical Knowledge/ Skills/ Training required:
- Operational experience in hotels/restaurants with experience in the same or similar position
- Ability to build relationships
- Front and back of house experience
- High Quality Service Standards and Guest Satisfaction focus
- Excellent interpersonal skills – communication with Area Executive committee President/VP/AGM/GM/HM/DO/others
- Outstanding verbal and written communication skills
- Critical thinking – demonstrated ability to analyze information, develop strategy, tactically direct the execution of the strategy, fine tune, revise strategy and fix processes
- Self-motivated and independent
- Operationally hands-on
- Heavy schedule of travelling. Need for resilience.
