Executive Chef for the Waldorf Astoria Dubai International Financial Centre at Hilton – UAE
Job Description:
Specifically, you will be responsiblefor performing the following tasks to the highest standards:
Operational
- Responsible for all menu creations with a creative flair using the finest ingredients and working within the concept. Arrange and attend all menu tastings.
- Responsible for department budgeting and P&L including monthly forecast and accrual.
- Be actively involved in ways to maintain and increase business levels. Being available to any marketing or publishing for the restaurants in conjunction with the marketing team. Carry out any recipe writing, food photography for any publication.
- Ensure daily, weekly and monthly administration is to company standards and meets set deadlines. Arranging of any external and internal events.
- Ensure all rotation of stock is done correctly and all chefs follow the correct storage procedures ensuring the appropriate stock level.
- Monitor food wastage within the active inventory system.
- Have full control on all inventory and purchasing and ensure all inventory information is posted on the system before cut off deadline.
- Be aware of competitor analysis to the business, as well as of local and international food trends.
- Any other duties as may reasonable be requested by the management.
Health & Safety
- Ensure delivering the Hilton Food Safety program and all health and safety papers are up to date and staff are fully trained to the required business level. Regularly assess the working practices within the outlet and action any issues immediately with the Health and safety team.
- Ensure all daily kitchen records and labelling are maintained and up to date at all times. Ensure that the food hygiene manuals are a working document and up to date at all times.
- Is fully responsible and accountable for ensuring that the full Kitchen / Stewarding area operates in accordance to local health and hygiene legislation.
HR/Training
- Identify training needs and conduct timely performance reviews for the kitchen brigade as per company requirements.
- Inspire and motivate the team to produce food to the business specifications and achieve sales and financial targets.
- Motivate and recognize good performance to manage staff recognition program in line with team member expectations.
- Recruit team members in line with company and statutory requirements.
- Deal with poor performance through performance discussions and where necessary instigate formal disciplinary proceedings in conjunction with HR policies.
- Ensures that all vacation planning is completed, updated and in line with business requirements
- Ensure succession planning of team members by setting key performance indicators, maintaining training calendars, conducting and overseeing appraisals and by providing regular feedback and coaching for all team members in the kitchen

Education:
Relevant Experience:
- At least 4 years’ experience as an Executive Chef.
- Experience in the luxury hotels
Technical Knowledge/ Skills/ Training required:
- Approaches food in a creative way
- Menu development experience is essential.
- Strong leadership skills.
